I'm rather surprised that another culinary first actually worked. I made breaded chicken breasts stuffed with pesto. They worked out remarkably well and tasty-tasty, possibly a little black but, for a first time...

Used food processor to make breadcrumbs, put in shallow bowl.
Dip in egg
Cut slit in chicken breast, put in "some" pesto
This is where it may go wrong as is fiddly! Pick up breast and lay in breadcrumbs to coat bottom. Place breadcrumbs on top of breast and pat down, trying to coat without disturbing/losing pesto! There has to be an easier way to do this, possibly involving parma ham or cocktail sticks.
Fry in medium-hot pan with a little oil, don't turn very often else you'll lose your coating and the coating will burn/the chicken will not cook.
